Raw Foods "Un-Cooking" Class with instructor Arianna Rose

Rockaway Raw "Un-Cooking" Class workshop debuts to rave reviews!
 
We had a wonderful first session at T-6 on June 4th, over 20 people strong. Divided into four tables of chefs, we learned what raw/living foods are, how they can benefit you, the basics of a raw kitchen, and how to prepare several meals. Working at each table, we created these yummy dishes:
Broccoli Soup
Cauliflower Mashed Potatoes
Spinach Caesar Salad
Sunflower Seed Balls
Fudge Balls
Ants on a Log
Raw Apple pie

 
We have three more classes for this series, each Wednesday night in June from 7-9 pm at T -6.
Here's our upcoming schedule:
 
Class Two, June 11: Nut mylks & Greens – smoothies and blended juices. In this class we will learn about how to make salad dressings, pate´s, nut milks, smoothies, juice feasting, what it is, why people do it, and learn to make our own delicious drinks. We will also touch upon supplements and learn about the superfoods such as goji berries, raw cacao, etc. Chef Arianna will be making lots of dishes from her raw kitchen to share with everyone.

Class Three, June 18: Main Dishes. In this session we will learn about the wide variety of vegetables and fruits available, and put together several main dishes. We will focus on dark leafy green vegetables, and the ‘good' fats as we create an Italian fiesta!
 
Class Four, June 26: Guilt-free Delectable Desserts. Raw cakes, pies, ice creams, and cookies – all delicious and good for you. Our final class will also involve everyone working communally to create a few dishes that we sit down and eat together!
 
In this class we will also talk about community support, how to keep going with Raw Foods, and how to cook with your families, especially children.

Ft Tilden & Jamaica Bay Wildlife Refuge (visitor's Center)
 
The walk on Saturday June 7 was as expected a great success. Three hours rather than two.
 
Our group of 7 saw 35 birds. Apryl found a little blue heron, Denis got a tri colored heron and a variety of us saw most of the herons, ibus and cormorants. We had good looks at the osprey and probably were the very first group to see a very new baby (fledgling). We also saw yellow and the common yellow throat warbler (two warblers who raise their young in Jamacia Bay. We also saw horseshoe crabs laying their eggs at high tide - which laughing gulls were laughing and feeding on.
 
Next Sat, Jun 14th at 10 am we will again meet at the Jamaica Bay parking lot and possibly visit the more rustic and quiet East side with hopefully a look at the barn owl at big johns pond.
 
On Sat Jun 21 - the Summer Solstice, we will again meet at the parking lot and then walk down to my sunset bird house. We will have lunch while watching my yard (bay) birds and a probably a close up view of my great egret whose favorite food is live killys from my fish trap.
 
Also I have watercolor pencils which we should make some sort of bird art statement with and bring to the house on the 21st for a show and tell. Art was the planned rainy day activity - but we have had sunny days for all our walks.
